From the kitchen of Angelina Amalfi--

SAUERKRAUT CHOCOLATE CAKE

2/3 c margarine
1 1/2 cup sugar
3 eggs
1 tsp. vanilla
2 1/4 cup flour, sifted
1/2 cup cocoa
1 tsp baking powder
1 tsp baking soda
1/4 tsp salt
1 cup cold water
2/3 cup sauerkraut, rinsed in cold water, drained and chopped up in small pieces

Cream sugar, margarine, eggs together. Add vanilla. Sift in flour, cocoa, baking powder, baking soda and salt into creamed mixture. Alternate adding cold water, then some sauerkraut and mix, a little at a time, until it is all added in.

Bake at 350 for 30 minutes.

FROSTING

1/2 cube butter
1/3 cup cocoa
1/3 cup canned (evaporated) milk
1 2/3 cup powdered sugar
1 tsp vanilla

Blend thoroughly. If you are going to use frosting in center of the two layers, then I would double this recipe, making each separately. For a less rich cake, in the center you can put the following (blended thoroughly):

1 pkg Dream Whip
1 tsp extra vanilla
1/2 cup powdered sugar
